Whisked Away Wednesday: White Chocolate Toffee Bliss


I wanted something with very few ingredients this week, I didn't go grocery shopping and didn't want to! This recipe for toffee oatmeal bars fit the bill! I stuck with the basic recipe and threw in some white chocolate chips and a crushed up Heath Bar. Results = smashing super sweet success. They are not the most pretty bar cookie, but who the heck cares when they taste so good! Brown sugar has to be one of my all time favorite ingredients/flavors, and this simple recipe allows its warm, molasses undertones to really shine through. They are REALLY sweet though so cut them small! The toffee gave them a nice crunch, and the white chocolate chips added a nice contrast to the caramelly flavor. And they have lots of oats in them so that's healthy right? right?? A girl can dream... now get whisking!

White Chocolate Toffee Bars
Recipe based on Toffee Bar recipe from Cookies by Patricia White (a goodwill cookbook find)

Ingredients
1 cup dark-brown sugar
1/2 cup butter
1/2 tsp salt
1 tsp baking powder
2 cups oatmeal (quick cooking works best)
1/2 cup white chocolate chips (or more if you want)
1 crushed Heath Bar (I would've put in two or three if I had them... but someone had eaten the other ones ;)

Preheat oven to 350 degrees. Combine sugar and butter in a saucepan, put over low heat and stir until butter melts.

Remove from heat, add salt, baking powder, oatmeal and candy.

Stir well until mixed.

Pour into an 8x8 baging pan lined with parchment paper. Bake for about 25 minutes or until the edges are browned and the center is bubbly. Cool pan on a cooling rack and cut into bars when cold. Store in a tightly covered container.
