If you ask me about my favorite desserts, pudding and pudding like desserts would not be among my top choices. I prefer a big cookie with ice cream, or a slice of fruit pie. However, this recipe has me singin a different tune. It is rich, fudgy, and pretty awesome. When eaten warm, it easily sneaks its way to the top (okay near the top) of my list of cravable desserts. I got the recipe from the lovely blog, "Finding Joy in My Kitchen" Seriously, check out her blog, it is chock full of amazing recipes. The recipe was originally from Pioneer Woman, who, in my opinion has some of the best recipes in the blogosphere! It is ridiculously easy to make, it does take about an hour to bake, but that works out well as you can use that hour to.. oh I dunno.. go jogging so you have plenty of room to indulge in one... or two... of these little beauties.
Pioneer Woman's Baked Fudge
Modified by Finding Joy in My Kitchen
2 eggs
3/4 cups sugar
2 heaping tablespoons of cocoa
2 tablespoons flour
6 tablespoons butter, melted
1 teaspoon vanilla
Preheat oven to 325 degrees. Beat eggs until scrambled, and then beat in sugar until combined.
Add cocoa, flour, melted butter and vanilla. Mix until combined.Pour batter into 4 rammekins, or 1 8-inch square glass pan.
Set dishes or pan into a larger pan, filled halfway with water. Bake for 40-50 minutes or until upper crust is crispy and the rest of the batter is set.
Don't over cook, you want the inside gooey!
Add a dusting of powdered sugar and enjoy!
