Gazpacho de Frutas

Happy Friday! So in my earlier blog, I remarked that Jose my boyfriend was up visiting me from Mexico these last few weeks. I also promised to post some mexican food recipes. This is the easiest one ever and the perfect summer snack! It is for gazpacho, one of my favorite mexican "street foods." We made it for my family who is all here taking care of my grandma and let me say, despite some trepidation at first (due to the strange combo of fruits, veggies, and spices), once everyone took a bite, they declared it an amazing success. The bowl was emptied in about five minutes flat. It just goes to prove that you shouldn't ever judge a new food before trying it!
When I was living in Morelia, I would basically get this every day after work. In Mexico, they have entire restaurants dedicated to making Gazpacho, but the little shop down the street from my apartment made the best! They always had the freshest fruit and I NEVER got a sour mango or mealy watermelon in my gazpacho from them. The whole thing only cost 2.00 to boot! So, you may be wondering, what exactly is gazpacho? This has caused a lot of confusion as the most commonly known gazpacho is a chilled soup with spanish origins. The gazpacho I know, however, is a mixture of fruits and vegetables, cut up and mixed with fresh squeezed lemon and lime juices and tossed with queso fresco and salt y chile al gusto (however spicy you want it.) The combinations are endless! Ranging from the super traditional - made with mango, watermelon, cucumber, jicama, onion, and chile serrano (serrano peppers), to the super simple - just mango for example. You can order it with whatever assortment of fruit and veggies you like (as long as they have them on hand). My favorite combination is mango, watermelon, jicama, and cucumber with extra cheese and chili powder. It may sound strange to combine jicama and cucumber with a fruit mix but they soak up the flavors and are very refreshing! The salt is a great addition as well and really brings out the flavors of the fruit. If you are on a low-sugar diet you can also make this with just the veggies. Queso fresco is a mild tasting white cheese that can be found at most grocery stores nowadays, or at your local mexican tienda. Jose and I bought all our ingredients at a local mexican fruit and vegetable market. It was pretty cheap and we were able to get a variety of mango types as well as pre-cut watermelon. In our recipe, we left out onion and serrano peppers as my family is not big on spicy foods or onion. I would recommend cutting up all the fruit and mixing it with the orange and lime juice and then letting people add their extra ingredients to their own liking. This recipe is also perfect for summer as no cooking whatsoever is involved. I hope you enjoy this little mexican bocadillo (snack) as much as I do!

Gazpacho de Frutas
Mexican Fruit Gazpacho
Serves 4 -5 people

We bought three different types of mango - the smallest one on the right is a miniature manila or ataulfo mango, the one in the middle is a typical Haden Mango, the one on the right is a normal sized manila mango. I recommend using the regular manilla mango as it is sweetest and less fibrous than Haden.

Ingredients
3 mangos (I recommend the yellow manilla mango)
1/3 large watermelon
1/2 medium jicama
Juice from 4 oranges
Juice from 2 limes
Salt to taste
Chili powder to taste
Queso fresco (however much you want, I like LOTS!)

Process
Jose demonstrating how to peel a mango.

Peel mango and jicama (and cucumber if using).

Dice jicama, peeled mango, and watermelon (or whatever mix of fruit/veggies you are using) into small cubes.
Juice the oranges and limes.
Mix juice and diced fruit in a large bowl.

Crumble the queso fresco and add to the mixture, add salt and chili powder to taste.

Mix well.
Serve topped with more cheese and chili powder if desired.

Josean, with LOTS of knifes.....

Finished product, provecho (enjoy)!

Whisked Away Wednesday: Buttercrunch Cookies

Happy Wednesday! Last time I was at New Seasons, they had a cookie sample of “Buttercrunch Cookies.” I tried them and they were sooo good, they had a butterscotch/toffee flavor with a bit of crunch. I ended up calling the store later and asking the girl that was working in the bakery to read me the ingredients. I was surprised when she said they included cornflakes. I decided to try and replicate these yummy cookies at home. Unfortunately, I couldn’t find a recipe that included all the key ingredients from the original cookie (cornflakes, coconut, and butterscotch chips). So I found a recipe for cornflake cookies that didn’t include coconut or butterscotch chips and I modified it to include them. The cookies turned out really yummy, the best part is the great crunchiness and texture the coconut and cornflakes add. They are almost the consistency of a pecan sandy, just a bit chewier. If you bake them longer you will get a crisper cookie, but I like my cookies soft and chewy, so I pulled them out when the edges began to brown. This is a great recipe and super easy to make. It makes quite a lot of dough so it may be good to half the recipe. I made the full recipe and froze part of the dough so I can make cookies on demand :) Happy baking!

Buttercrunch Cookies

Ingredients

1 cup butter
1 cup vegetable oil
1 cup white sugar
1 cup brown sugar
1 egg
1 cup crushed corn flakes

1 tablespoon baking powder
1/2 teaspoon salt
2 teaspoons vanilla extract

Directions:

Add oil.

Mix in dry ingredients (you do not need to put them in a separate bowl to do this, just add them all in and stir).

Form dough into balls. Place on cookie Bake for 10- 12 minutes.Cool on pan for a minute or two, then transfer to a rack to cool.

Best Chocolate Strawberry Pancakes

Hello! Today was Jose's last day here so I woke up sad sad sad! He had asked me to make "hot-cakes" for breakfast and I didn't want to make just regular everyday hot-cakes... I wanted them to be special. I googled best ever pancakes and found this recipe. It adds in strawberries and chocolate chips, yummy! Jose was a little skeptical about the add-ins so I made him a tester. He loved it! This is a very sweet, decadent recipe but it really is soooo good! We had maple syrup but ended up just eating them plain with no toppings because they are very flavorful, especially with the strawberries and chocolate chips. We didn't need syrup or anything because the pancakes tasted so delish on their own. The recipe makes about 9 large pancakes or a bunch of little ones. Enjoy!

Sunday Morning Pancakes

Adapted from Chew On That Blog

Ingredients

3 cups flour
6 tbsp sugar
6 tsp baking powder
1 1/2 tsp salt
3 beaten eggs
6 tbsp oil
1/4-1/2 cup milk
2 1/4 cup milk chocolate chips (milk or dark, I used milk)
Chopped strawberries

Combine dry ingredients in a large bowl.

Add wet ingredients. Mix in milk to make the batter pourable.

Heat oil or margarine in a medium size skillet. Pour some pancake batter into skillet.

Add in chocolate chips and strawberries. Cook each pancake 1-2 minutes until golden brown, They are ready to flip when the bubbles that form on the surface begin to pop. Flip and let the other side become golden brown. Serve with a glass of milk and a sprinkle of love :)

Oh and if anyone knows why they are called pancakes some places, and hotcakes other places, I would LOVE to know!

On another subject, my grandma has been moved back to her apartment from the hospital so she is more comfortable. She was diagnosed with terminal cancer last week. She has 24 hour hospice care and we are trying to make her last days here as special as possible. All three of my sisters and my little baby nephew have come home to be with her for a while. Jose has also been here visiting me from Mexico. So, needless to say, I have been very busy spending as much time as possible with everyone while they are here. I have also been cooking up a storm for my family, but haven't had any spare time to blog about it. I will continue working on these blogs and hopefully I will be able to post some new recipes this week. These will include some amazing mexican recipes courtesy of Jose. I will get these up as soon as I can. Thank you for your prayers and well wishes for my grandma!

Have a great week,

Whisked Away Wednesday: Crazy Colors White Chocolate Sugar Cookie Bars

I usually steer clear of any premade cookie dough as homemade cookies are so easy to make and taste way better. However, when I saw these flag cookies on sale the day after the fourth of July, I snapped them up. I had been watching Everyday Italian on Food Network the other day and had seen Giada (the chef) make a cookie bar using pre-made sugar cookie dough. I decided to give the recipe a try using my flag dough. The recipe is really easy, basically all you do is roll out the sugar cookie dough, put it in a pan, cook it, top it with jam and a drizzle of chocolate and you're done! the only problem was the fact that my premade cookie dough had flags stamped all over it so when I mooshed it together and rolled it out it turned a horrible color. Fortunatley, the layers of jam and chocolate pretty much covered up the ugly sugar cookie crust, and the bars tasted great! So below is the recipe, feel free to custimize it according to waht ingredient's you have on hand. I bet it would be really tasty if made using cherry jam with a milk chocolate drizzle. Hope you enjoy, happy baking! .

Before the smooshing

After the smooshing... before the baking

After the baking and smooshing... I swear it just tastes like sugar cookies, no wierd flavors!

End result, quite tasty!

Granola Bars

Hello! Happy Tuesday... My weekend was a little stressful because my grandma is having health problems :( But Jose is here so that helps me de-stress! This morning my parents had to go to the hospital with my grandma and since when I get stressed, I bake, that is what I did. I decided to make a recipe I found on Lynn's Kitchen Adventures blog for homemade granola bars. I figured that if we are going to be spending a lot of time at the hospital, it would be nice to have something healthy and portable on hand to take with us as hospital snack food is not the best! I made the bars exactly like she says in her recipe except I only put in two cups oats and I added in 1/3 cup raw sunflower seeds. I also added dried cranberries and chocolate chips. They turned out pretty yummy and definitely better than any store bought variety! Cheaper too! Sorry about the lack of good pictures but I've been so busy I didn't have time to upload them all. I hope you all have a good week. Keep us in your prayers, especially grammy!

Cranberry Chocolate Granola Bars

Courtesy of Lynn's Kitchen Adventures

Ingredients

1/2 cup butter

1/2 cup brown sugar

2 tblsp honey

2 tblsp corn syrup (I used light)

2 cups quick cooking oats

1/3 sunflower seeds

About 1/3 cup cranberries (I didn't actually measure, I just put in a handful)

Sprinkle of chocolate chips (I didn't actually measure these either)

Grease an 8x8 inch pan. In a sauce pan, combine the butter, brown sugar, honey, and corn syrup. Stir constantly over medium heat until butter melts, sugar dissolves, and mixture is smooth. Remove from heat and add oats, cranberries, sunflower seeds, and chocolate chips. Stir well until oats are well coated. Spread mixture into 8x8 pan. Bake for 22 minutes at 350 degrees. Cool 5 minutes and cut into bars (this is a little tricky cause the bar will stick to the knife so clean the knife often). Let cool one hour more in pan and then remove bars from the pan (they won't be completely cooled yet but at this point it is easiest to get them out).

Fill in the Blank Friday

Made in Oregon!

Happy Friday! We made it through the week! Jose is visiting me from Mexico this weekend and he just got here last night (Jose is my bf from Mexico FYI). After his flight came in we went downtown and walked around and found an amazing restaurant called Violetta.

If you live in Portland or near Portland you cannot miss out on this place! Super cheap prices and amazing food! I had black truffle fries and let me tell you, out of this WORLD good and only 4 bucks! Jose had a burger and it was super tasty as well. I love locally run, sustainable businesses like this one. Such a great find, I will definitely be returning! I snagged a Fill in the Blank Friday from my dear friend Lauren's blog so enjoy and have an amazing weekend!

1. My favorite thing about this week has been Jose coming to visit me and me not having to work today AND the fact that blueberries are showing up more at the market!

2. The weather this week has been AMAZING! I am loving it... except my apartment doesn't have AC so that kinda stinks.

3. The last (interesting) item I received in the mail was Coupons for pizza hut... not very exciting at all, but at least it wasn't a bill!

4. The last movie I saw was Ratatouille, one of my all time faves, puts me in a good mood no matter what! and I've been watching old Paula Dean episodes on DVD, does that count?

5. If I could be doing anything I felt like today I would I actually get to do this cause I have the day off in honor of Jose's visit. So we are gonna go get delicious Mexican food and then hike silver falls. Not a bad day all together!

6. As a teenager I was awkward and had poofy hair, and bad taste in fashion

7. I wish I could trade lives for the day with maybe Harry Potter, it would be pretty freakin sweet to do magic, but only AFTER Voldemort is taken care of, cause I wouldn't want to meet him!

mmmmmm... black truffle oil fries

Couldn't wait for a bite!

Martha's Rosemary Almonds

Today I love... long flowy summer dresses like this one, frozen cookie dough, my bread machine and puppies!

Does it get any cuter???

Now, for something I love everyday..... snacks.... little delicious morsels I can nibble throughout the day. Extra bonus if the snacks are nutritious and not chock full of sugar. These rosemary almonds are full of good for you things and are wonderfully addictive! I clipped the recipe from Martha Stewart Living a few months back and have made them quite a few times since then. The first time I made them I used dried rosemary as I didn't have fresh on hand. However, when I discovered that the italian restaurant down the street has a HUGE rosemary plant out front, I decided to try them with fresh rosemary :) (It's a really big plant, I'm sure they don't mind my borrowing a branch every now and again). Fresh rosemary, if you have it, makes for a more flavorful snack but the dried is pretty darn good too. Enjoy, and happy snacking!

Rosemary Candied Almonds
Recipe from Martha Stewart Living, May 2010

Ingredients

2 tbsp sugar
Coarse salt
2 tbsp unsalted butter
2 tbsp honey
2 cups raw almonds
2 tbsp fresh rosemary

Preheat oven to 375 degrees. Stir together 4 teaspoons sugar and 1/2 tsp salt. Set aside. Heat butter and honey over medium-high heat in a large skillet until bubbling. Remove from heat.

Add almonds and rosemary, toss to coat
Transfer alomd-rosemary mixture to a parchment or foil lined baking sheet (don't scrape excess syrup from skillet, it will make them too gooey). Sprinkle almonds with sugar/salt mixture. Roast almonds until fragrant, 8-9 minutes.

Remove from oven and sprinkle with remaining 2 tsp. sugar and 1/2 tsp salt, toss to coat. Let cool completely.

If your not going to eat them soon, they can be stored in a tightly sealed tupperware in the freezer for up to one month. That is a month's worth of yummy munching!
