Chocolate Strawberries and Cream Pie

After Easter candy sales depress me. Chocolate bunnies and marshmallow chicks look down from their discount shelves, never to fulfill their Easter dreams. I always end up buying a few (of the bunnies, sorry chicks but I'm not a fan) and then they sit on my shelf waiting for some higher purpose. And I imagine that being used in this pie would be a chocolate bunny's dream. Well, actually maybe not since they get melted down and spread over a pie crust then topped with fluffy cream and fresh juicy strawberries. But hey, at least they made it out of the store, right?!
*Disclaimer, yes I realize that the bunnies are made of chocolate and probably don't have "feelings"

Chocolate Strawberry and Cream Pie
3 ounces chocolate, divided or one big Easter bunny broken into pieces
1/2 tablespoon butter (can be omitted if using a high quality Easter Bunny) `
1 pastry shell (9 inches), baked (use your favorite recipe)
2 packages (3 ounces each) cream cheese, softened
1/2 cup Sour Cream
3 tablespoons sugar
1/2 teaspoon vanilla extract
3 to 4 cups fresh strawberries, hulled
1/3 cup strawberry jam, melted

In a large saucepan, melt 2 oz. chocolate and butter over low heat, stirring constantly. Note -try to use a good quality bunny or the chocolate will be harder to spread when melted. Spread or brush over the bottom and up the sides of pastry shell.
Chill.
Meanwhile, in a large bowl, beat the cream cheese, sour cream, sugar and vanilla until smooth.
Spread over chocolate layer; cover and chill for 2 hours.
Arrange strawberries over the filling.
Brush with jam. Melt the remaining chocolate and drizzle over the top. Yield: 6-8 servings.
So good!

Carrot Cake Cookie Sandwiches

Spring has sprung here in Oregon, we are getting sun about one day a week, which is pretty darn good for the Northwest! Spring makes me happy, and when I'm happy, I bake (and run which is needed due to all the baking!) My most recent baking accomplishment is a carrot cake cookie sandwich. I used Martha Stewart's Carrot Cookie Recipe and sandwiched the cookies together with a cream cheese frosting. Martha's recipe calls for raisins but I left them out as I used up all my raisins making these. I also had no cinnamon so I added in pumpkin pie spice instead, sounds weird but surprisingly worked really well in the cookies! They are super moist and the carrots give a nice subtle flavor, don't worry not too carroty. I even had a veggie hater sample one and he declared them delicious, actually he just ate two more so I declare that they must've been delicious!

Carrot Cake Cookie Sandwiches
Adapted From Martha Stewart
1 cup packed light-brown sugar
1 cup granulated sugar
1/2 pound (2 sticks) unsalted butter, room temperature
2 large eggs, room temperature
1 teaspoon pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 teaspoon pumpkin pie spice
2 cups old-fashioned rolled oats
1 1/2 cups finely grated carrots, (about 3 large carrots)
Cream Cheese Frosting (recipe here)

Preheat oven to 350 degrees. Line two baking sheets with Silpat baking mats or parchment paper, and set aside.
Combine sugars and butter; beat until light and fluffy, 3 to 4 minutes. Add eggs and vanilla, and beat at medium speed until well combined.
In a large bowl, sift together flour, baking soda, baking powder, salt, and pumpkin pie spice; stir to combine.
Gradually add flour to butter mixture; mix on a low speed until just blended.
Mix in oats and carrots. Chill dough in refrigerator until firm, at least 1 hour.
Using a 1/2-ounce ice-cream scoop, scoop dough onto prepared baking sheets, leaving 2 inches between cookies. Transfer to oven, and bake until browned and crisped, rotating pan halfway through baking to ensure even color, 12 to 15 minutes. Transfer to a wire rack to cool. Repeat baking process with remaining dough.
Once cooled completely, spread cream-cheese filling onto a cookie. Sandwich together with a second cookie.
Repeat with remaining cookies. Store in an airtight container for up to 3 days in the refrigerator.

Light Strawberry Cream Cheese Muffins


Another tasty light option today! Strawberry Cream Cheese Muffins. The perfect way to utilize any frozen berries still lurking in the depths of your freezer. The muffins are sweet and tender with berries bursting through in every bite. The lovely thing about this recipe is that it is so very versatile. The original recipe calls for raspberries but really any kind of berry or fruit would be delicious (okay maybe not ANY kind, but most kinds!) The muffins stay healthy thanks to non-fat cream cheese and the use of egg whites. I used even less sugar than called for in the recipe, and some of the reviewers said they halved the butter and added an eighth cup of applesauce. Oh the healthy possibilities!

Strawberry Cream Cheese Muffins
Adapted from Cooking Light

2/3 cup (5 ounces) fat-free cream cheese, softened
1/3 cup butter, softened
1 1/4 cup sugar
1 1/2 teaspoons vanilla extract
2 large egg whites
1 large egg
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup low-fat buttermilk
2 cups fresh or frozen strawberries, chopped

Preheat oven to 350°. Combine cream cheese and butter in a large bowl.
Beat with a mixer at high speed until well blended. Add sugar; beat until fluffy. Add vanilla, egg whites, and egg; beat well. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, baking soda, and salt.
With mixer on low speed, add the flour mixture and buttermilk to cream cheese mixture, beginning and ending with flour mixture.
Gently fold in strawberries. Grease 24 muffin cups or line with foil cup liners in muffin cups.
Spoon batter evenly into liners. Bake at 350° 25 minutes or until a wooden pick inserted in center comes out clean.
Remove from pans; cool on a wire rack.
The Cooking Light website says that each muffin has 142 calories. If you make the adjustments I made (less sugar, non-fat cream cheese, omit nuts) they are even less than that! So eat two!

St. Patty's Day Mint Oreos

Ive been wanting to try homemade oreos for awhile, I used a chocolate cookie recipe from Joy of Baking (an amazing website by the way). The filling recipe I borrowed from Sister's Cafe. It is basically a cream cheese frosting to which I added mint extract and green coloring, in honor of St. Patty's day.
It was quite delicious, but not very oreo-esque. The actual oreo filling recipes all included shortening and that didn't sound too appetizing to me... thus the frosting filling. The cookies are super chocolaty and crisp up as they cool. Much better than the store bought oreo cookies, and not hard to make at all!

Homemade Oreos
1 cup (130 grams) all purpose flour
1/2 cup (50 grams) unsweetened cocoa powder (sifted)
1/4 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons (45 grams) unsalted butter, room temperature
3 tablespoons (45 grams) margarine (or Smart Balance)
2/3 cup (140 grams) packed light brown sugar
1/2 cup (100 grams) white granulated sugar
1 teaspoon pure vanilla extract
1 large (30 grams) egg white

In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
In the bowl of your electric mixer (or with a hand mixer), beat the butter and margarine until well blended. Add the sugars and vanilla extract and beat on high speed for about one minute. Scrape down the sides of the bowl. Beat in the egg white. Add the flour mixture and beat just until incorporated.
Place the dough on your work surface and, using your hands, form the dough into a log shape that is about 9 inches (23 cm) long. Carefully wrap the dough in aluminum foil, parchment paper or wax paper and fold or twist the ends. Try not to flatten the log (easier said than done, some of my oreos were square). Refrigerate for at least one hour or overnight.
Preheat the oven to 350 degrees F (177 degrees C) and place the oven rack in the center of the oven. Line two baking sheets with parchment paper.
Using a sharp knife, slice into 1/4 inch thick wafers. Place on the baking sheet spacing about 1 inch (2.5 cm) apart. Bake for approximately 10-12 minutes or until the the cookies puff and the tops of the cookies have crackles (ripples). Remove from oven and let cookies cool on baking sheet for about 5 minutes before removing to a wire rack to cool completely. Can be stored in an airtight container, at room temperature, for about 10 days.

Cream Cheese Filling
1/2 cup butter (1 stick)
1 block of cream cheese, room temp (8 oz)
3-4 cups - powdered sugar (depending on desired consistency)
1 - tsp mint extract
A few drops green food coloring
Cream butter and add cream cheese, add food coloring and mix well.
Add powdered sugar slowly until you reach your desired consistency.

Frost backs of cookies and smoosh together.
I used a pastry bag and tip, but a knife would do the trick.

Brown Sugar Streusel White Chocolate Cranberry Cream Cheese Coffee Cake




Cranberries were on sale for a dollar a bag at Safeway yesterday! I am not the proud owner of 5 pounds of cranberries.. good thing they freeze well! You can expect to see many cranberry recipes in the coming weeks. I am starting off with a brown sugar streusel white chocolate cranberry cream cheese coffee cake. Whew.... longest name ever, but it's so chock full of good stuff! I used a recipe borrowed from Alicia's Homemaking, a lovely blog with lots of good recipes and home making tips. To her recipe, I added fresh cranberries and white chocolate chips. I also decided to try it topped off with streusel. The streusel got a bit browner than I like. But the end result was a crisp, buttery brown sugar coating that goes great with the creamy cake. and OH MAN the cake is good! Super creamy thanks to the cream cheese and studded with juicy cranberries and sweet, milky white chocolate chips. Delicious overload and the perfect way to use up your left over cranberries, right??

White Chocolate Cranberry Coffee Cake (shortened title)
Recipe Adapted from Alicia's Homemaking
Makes 2 Loafs

1/2 cup butter
8 ounces cream cheese
1 1/4 cups sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup milk
1/2 to 1 cup white chocolate chips (depends how much extra sweetness you want)
1 cup cranberries
(I gave mine a quick chop, but you could use them whole too) tossed with 1 tablespoon flour and a sprinkle of sugar (so they don't sink to the bottom)

Streusel topping
1 stick butter (softened a bit)
1 cup flour
1 cup brown sugar

Preheat oven to 350 degrees.
Cream sugar, butter, cream cheese and eggs together in a large bowl. Add vanilla, salt, and baking powder.
Gradually add in the flour, keeping the mixture smooth. Add milk.
Fold in the cranberries and chocolate chips.
Pour into greased, floured or sugared (I sugar my pans) pans, dividing batter in half.
For the topping, mix together butter, flour, and brown sugar until they have the texture of wet sand.
Sprinkle over the batter covering completely.
Put cakes in the oven for 45-50 minutes, or until a toothpick in the center comes out clean.
*Note: The streusel turns very dark brown (I used dark brown sugar), but it caramelizes and gives a lovely crunch to the cake. If you are not a fan, by all means, make the cakes without the streusel and they will still be delicious :)
