Curry Chicken Salad


Chicken salad takes me right back to my childhood, finding a chicken salad sandwiches packed in my lunch was a special treat. This recipe is a variation on the chicken salad I remember from my childhood as it adds in curry powder and hard boiled eggs. I left out the celery and onions (didn't have any), but next time I'll add them in, it was missing crunch. I recommend that you let it sit overnight to allow the curry flavor to intensify and serve it the next day over salad greens or in a sandwich if you like. On a side note, I think craisins and or cashews would be a delicious addition, but beware that it will up the carb count!

Curry Chicken Salad
3 hard boiled eggs
2 cups chopped, cooked chicken meat
4 stalks celery, chopped
2 tablespoons chopped green onions
2 tablespoons dill pickle relish
2 1/2 teaspoons curry powder
3 tablespoons mayonnaise
Salt to taste

Peel and chop hard boiled eggs.
In a large bowl, combine the chicken, celery, eggs, green onions, dill relish, curry and mayonnaise.
Stir together until mixed well. Refrigerate until chilled, preferably overnight.

Tuna Melt Wraps with Avocado



I love a good tuna melt, I also love a good quesadilla, so how bout we combine the two in a wrap? Ok! This began as a way for me to use up some leftovers from my fridge, half a bag of cheese, some tortillas, a tomato, mushrooms, and an avocado. First I mixed the avocado with tuna and a bit of mayo. Then I slapped on the veggies, gave it all a good sprinkle of cheese and broiled it in the oven for a few minutes. The results were simple, delicious, and healthy to boot!

Tuna Melt Wraps

Ingredients
Makes 2 asombroso (amazing) wraps
1 Ripe avocado

1/2 cup sliced mushrooms

1-2 Tablespoons light mayo (according to taste)

1/2 tomato, sliced

1 can light tuna packed in water

1/2 - 3/4 cups cheese

2 tortillas


Mash together avocado, mayo, and tuna. Season with salt and pepper to taste. Take one tortilla, smear with tuna mixture,
layer on some mushrooms
and tomato slices and sprinkle the whole thing with cheese.
Repeat with remaining tortilla. Place on a baking sheet in the oven and broil for about two minutes or until cheese has melted (watch CLOSELY, oven heats vary and these can burn quite quickly).

When cheese is melty, pull out of the oven and wrap tortilla, securing with a toothpick if it wont stay. Cut each wrap in half and serve.

Whisked Away Wednesday: Mini Bagels Two Ways

So I don't know if I've mentioned it before, but I am awful about impulse buying at the grocery store. Last week when I was grocery shopping, they had a special on those cute mini bagels. I got two bags full! I did not, however, eat two bags full. I ate one bag that week and the other one has been lurking in the back of my refrigerator for the past week. I finally decided that I better do something about them or they were gonna turn into not so cute, green, fuzzy mini bagels. I sliced them up thin, brushed them with butter, sprinkled with cinnamon sugar and had my own semi-homemade bagel chips. They are sweet and crispy, the perfect after work or school snack. I whipped up a super easy honey cream cheese dip and served it alongside the bagel chips. Plus, for a bonus, I used one of the leftover bagels that I didn't make into chips to make a to-die-for banana peanut butter sandwich. Two healthy(ish) ways to satisfy those sweet tooth cravings!

Cinnamon Sugar Bagel Chips
Recipe adapted from Cooking Light
Just a few ingredients...

12 mini bagels
3 tablespoons cinnamon
4 tablespoons sugar
2 tablespoons butter
Preheat oven to 350 degrees. Line two baking sheets with parchment paper and set aside. Thinly slice bagels (I got about four slices per bagel). Lightly brush both sides of bagel slices with butter. Combine sugar and cinnamon, stir well. Place bagel slices on lined baking sheets, sprinkle with cinnamon sugar mixture. Bake for 10-12 minutes or until lightly browned.

Honey Cream Cheese Dip

Ingredients
8 ounces cream cheese, softened
2 tablespoons honey
2 teaspoons cinnamon

Whisk together all ingredients until well combined. Can be stored in the refrigerator for up to one week.


Ooey Gooey Banana Sandwich
Ingredients
1 mini bagel, split in half
5-6 banana slices
1-2 tablespoons Honey Cream Cheese Dip (see above recipe)
2 tablespoons peanut butter

Spread one side of bagel with peanut butter.

Cover with banana slices.

Glop on Honey Cream cheese spread. This is gonna get messy, just embrace it!
Spread other half of bagel with more peanut butter and place on top of sandwich.
Prepare to enjoy one ooey gooey good sandwich!

Double Duty: Barbecue Pulled Pork Sandwiches and Barbecue Mac and Cheese


Happy Friday! Who loves a good crock pot meal?? I do! Earlier this week, I made a super easy bbq pulled pork in the crock pot. I got the idea from Mel's Kitchen Cafe blog. It has been so hot here this week that I really haven't wanted to turn on the oven, or even the stove for that matter, so I was thrilled to find another great crock pot recipe. It was so simple and turned out delicious. I put the pork in sandwiches and enjoyed it thoroughly. Now it's Friday and my fridge is full of leftovers. Time to use some up! I threw my leftover mac and cheese (from this post) and the leftover pulled pork into a big bowl, mixed in some extra cheese and scooped it into individual casserole bowls which I then sprinkled with MORE cheese and warmed up in the oven. It was soooo good! Perfect lazy Friday meal! I think I liked the mac and cheese even better this way... Which is saying something cause that mac and cheese was some good eating! I hope you guys enjoy, and take it easy! It's Friday! The perfect day for leftovers!


Ingredients:
3-4 pounds pork loin
Salt and Pepper
2 cups water
Your favorite barbecue sauce (about 2 cups)

Rinse the pork loin and pat dry. Sprinkle with salt and pepper and put in slow cooker. Add water. Cook on low for 8 - 10 hours until very tender (mine was small so only took 8 hours).

Remove from slow cooker and discard remaining liquid. Using two forks, shred the meat.
Place back in cooker with barbecue sauce. Cook until heated, about 20-30 minutes. Stick it on a bun and your done! (sorry about the silly rhyme... I spend alot of time with kids ☺) Refridgerate leftovers in a tightly covered container.

Ingredients:
Pulled pork (however much you have left over)
Mac and cheese (again whatever you have left over)
Barbecue sauce
Cheese

Mix leftover pulled pork and macaroni in a large bowl with 1/2 - 3/4 cup good quality cheese (I used tillamook cheddar and jack cheese) and about 1/3 cup barbecue sauce (depends on how saucy you want yours). Scoop into individual casserole cups. Top with a sprinkle of grated cheese. Heat in oven on low heat until warmed through (about 15 minutes).

Mozzarella Stuffed Tomato Basil Turkey Burger Sliders



Happy Monday! This beautiful weather has been doing wonderful things for my little basil plant! It has been growing like crazy. So that means it's time to start cooking! I don't want any of those tasty leaves to go to waste.
One of my favorite combos is basil, tomato, and mozzarella. So, when I looked in my freezer and saw the turkey burger, inspiration struck me. Why not make mozzarella stuffed turkey burgers and top them off with fresh basil and vine ripened tomatoes? So fresh and easy! They turned out delicious! I used mozzarella cheese balls that I got at Whole Foods but I bet the same great flavor could be achieved using shredded mozzarella. The combination of flavors in these little burgers perfectly typifies summer and it is an easy healthy meal to throw together when you don't feel like slaving over a hot stove. I served mine up with some garlic fries but they would also go great with a salad or grilled veggies (for less carbs). Hope you have a wonderful day and enjoy these little sliders!

Mozzarella Stuffed Tomato Basil Sliders

Ingredients

1 lb Ground Turkey
1 package mozzarella cheese balls or 1 package shredded mozzarella cheese
Salt and fresh ground pepper to taste
1 cup bread crumbs
8 small hamburger buns
16 small basil leaves
8 slices fresh tomato

Divide turkey into 8 pieces. Mix each piece with 1 to 2 tblsp breadcrumbs, season with salt and pepper and divide each piece into two equally sized patties (you should now have 16 small patties).

Put 8 of the patties onto a foil lined baking sheet, top each with mozzarella cheese.

Top with other patty, pressing gently around the edges to seal the cheese in. Sprinkle with breadcrumbs. Place tray in oven about 6 inches from the broiler. Broil for about 7 minutes or until cooked through. When cooked, remove patties from oven, place on bun, top with 2 small basil leaves and a slice of tomato and serve!
